I’m glad to be back after my impromptu blogging break.  With a sick kiddo, hosting Thanksgiving and decorating the house for Christmas last week, blogging took a back seat.  We’re back in the routine of school and everyday life this week, and here is the plan for eating:

BREAKFAST:

Oatmeal, yogurt or granola x5 (not feeling terribly creative in the breakfast realm this week :))

Bagels and cream cheese x 2

LUNCH:

Coconut Orange muffins (my first experiment with coconut flour – I’ll be posting about these later today), baked beans, steamed green beans

PB & J on Yogurt Bread, fresh veggies

Millet, Spinach and Sausage (must use millet I bought . . .), fruit

Baked potatoes, steamed broccoli, cheese, fruit

Hot dogs, fresh veggies, apples

Leftovers x 2 (Turkey Soup and Mexican Chili Dip)

DINNER:

Turkey Barley Soup, fruit

Mexican Chili Dip, Corn Chips, carrots

Black beans, brown rice, fresh salsa and guacamole

Broiled Tilapia, sweet potatoes, steamed peas

Chili Burgers with lettuce, tomatoes, and avocados, steamed corn

Pizza Waffles (post to come later in the week on these as well) and Christmas movie night!

Leftovers & Whatevers

As I am typing this, I am wondering when exactly I think I am going to find the time to do all of this from-scratch cooking and baking!  I am hosting a party on Friday evening, and I have baking and food prep for that as well.  Who knows, maybe I’ll just scrap the whole plan and buy treats from Trader Joe’s.  My sanity sometimes trumps my budget.  Just being honest :).

One more week of school before our Thanksgiving break.  I am really looking forward to our line-up of great books and activities this week.  Here is what we have planned for meals:

BREAKFAST

We’ll be having a fresh fruit and veggie smoothie every morning this week and one of the following:

Yogurt, oatmeal or granola x 5

Pumpkin Pancakes, Maple Icing

Leftover Granola Bars

LUNCH

Egg Boats (otherwise known as Deviled Eggs :)), fresh veggies and dip

Hot dogs, fresh veggies and dip

PB & J, fresh veggies and dip

Granola Bars, fresh veggies and dip

Leftover Pinto Bowls

Leftover soup, lettuce wraps x 2

I will also be making some sort of apple dish for church potluck lunch.

DINNER

Tuna, Spinach and Rice (the original recipe is vegetarian), steamed green beans, fruit

Black Bean and Barley Stew, steamed broccoli, fruit

Chicken, Broccoli and Mushroom Rice, steamed peas, fruit

Pinto Bean Bowls (These are way easier for my kids to eat than tacos.  Pinto beans in a bowl, with taco fixin’s on top, and eat with corn chips.), fruit

Roasted Potatoes, Green Beans and Sausage, fruit

Chicken and Rice Soup, steamed broccoli, fruit

Leftovers and Whatevers (This is our standard fare on Sunday nights.  We don’t get home from church until a little after 4:00, and this is a great way to make room in the fridge for Monday’s shopping trip!)

Pumpkin Spice Granola

I have a set amount of money to spend every month on groceries.  Monthly budgeting works best for me since I buy in bulk quite often.  When I buy chickens from my farmer, I don’t just buy one.  I order large quantities of dry goods from Country Life Natural Foods.  You get the idea.  So, when I have a month with five Mondays (my usual shopping day), that last week is usually “eat what we have in the house even if it seems a little weird” week.  Think I should come up with an acronym for that?  Probably not.

Anyway, welcome to that week :).

BREAKFASTS:

Yogurt or oatmeal, fruit (we have a lot of frozen raspberries, so that is probably what we will be eating all week) x 2

Homemade Pumpkin Spice Granola or oatmeal, fruit x 2

Pumpkin pancakes, Maple Icing

Pumpkin Chocolate Chip Muffins, fruit

Cinnamon Raisin biscuits, Maple Icing (instead of icing with tons o’ sugar)

LUNCHES:

Apple slices with peanut butter, raw milk cheddar cheese, fresh veggies

Hot dogs, fresh veggies

Eggs (scrambled or over easy), fresh veggies

Pumpkin Chocolate Chip muffins, baked beans, steamed green beans

PB & J made on this bread (really looking forward to trying this!!), fresh veggies

Baked potatoes or sweet potatoes, raw milk cheddar cheese, steamed broccoli

Sloppy Joes, oven roasted potatoes, green salad, fruit (We’ll be having company – can you tell?)

DINNERS:

Lentil and Rice Taco Bowls, tomatoes, avocados, black olives, raw milk cheddar cheese, fruit smoothies

Pad Thai with tons-o-veggies and eggs, fruit

Spaghetti with marinara sauce, green smoothies

Roasted Chicken, gravy, mashed sweet and white potatoes, steamed peas

Tuna and Rice Casserole (from the freezer – yay me!), fruit

Pizza and Movie Night!!

Wow – I am still riding the high of last week’s triumphal introduction of five new recipes.  Downright amazing.  This week I am mostly sticking with favorites, but I will be sharing several of my own recipes throughout the week.  I’ll update this post with links as the week progresses.  Expect good things.

BREAKFAST:

Yogurt and fruit (I serve organic whole milk yogurt, sweetened with maple syrup or raw honey) x 2

Homemade granola or oatmeal x 2

Pumpkin Pancakes with Maple Icing

Strawberry Shake, Breakfast Cookies

Baked Apple Oatmeal (I never made this last week because I ran out of eggs!)

LUNCHES:

To avoid being repetitive, I’ll tell you now that I always serve raw veggies and Homemade Ranch Dip with lunch.

Baked Potatoes, Cheese, Steamed Broccoli

Bagels and cream cheese

Hot Dogs

Blueberry Muffins, Scrambled Eggs

Black bean Quesadillas

PB & J

Energy Bites (enough to share at church)

DINNERS:

Homemade Mac & Cheese with spinach and carrots, apples

Honey Nut Salmon, Green Beans, fruit

Vietnamese Fried Rice, fruit

Potato Corn Chowder, Oatmeal Bread

Roasted Chicken, Corn Bread, Peas

Homemade Pizza  (this recipe is quick since there is no rise time!) & Movie Night

Leftovers & Whatevers

We’ll see how the plan plays out this week.  Jason is working a lot this week and will only be home for a few lunches and breakfasts and only one dinner.  Sometimes I loose some cooking steam at the end of a long week and start serving oatmeal for dinner :).
