Back to reality! To be really honest, I am not feeling up to it. Today is actually still a day off, as my two school-age kids are at their cousins’ house for the day. It seems so quiet around here with Jason and the two oldest gone. Who knew that having a four-year-old, a three-year-old and a baby would cause a calm in the house!
Here are the meals I have planned for the week:
BREAKFASTS:
Baked Apple Oatmeal, Maple Icing
Pancakes with Blueberry Syrup
Breakfast Cookies, fruit
Yogurt, Oatmeal or Granola, fruit or smoothie x 4
LUNCHES:
Bean bowls (refried beans topped with tomatoes, avocados, and cheese), veggies, corn chips
Baked potatoes, broccoli, apples
No-Bake Energy Bites, veggies
Omelets, veggies, fruit
Granola Bars, veggies, cheese
PB sandwiches (with jelly or banana and honey), veggies
Leftovers
DINNERS:
Cabbage, Ham and Mashed Potatoes (unbelievably, my six-year-old son has been begging for this!)
Chili Burgers (delicious veggie and bean burger) with tomato and avocado, steamed corn, fruit
Tuna Pockets (I have high hopes for these – I’ll let you know how they turn out), steamed peas, fruit
Spanish Rice, refried beans
Chicken Soup (not sure which one yet – too many yummy versions to choose from!!), steamed green beans
Pizza Fondue, Breadsticks
Leftovers
I hope that doesn’t overwhelm me – I’m trying to ease myself back into our regular routine. We’re all a little ba-humbug about it :).

When do you exactly make Baked Apple Oatmeal? We eat breakfast at 8am and I am getting the kids ready before that. When do you make it first of all and then allow the time to cook it so it can be ready for breakfast at 8am? I am not wanting to get up at 6 or earlier to make this LOL! 6:30 am wake time is earlier enough for me. I don’t usually get the kids until 7 or so but I am getting ready myself prior to that.
If you put the apples in the fridge overnight will they brown? It looks good, just not sure about the time frame….
Great question! Trust me, if it needed to be done that morning, I would never do it! I put the Baked Apple Oatmeal together the night before and stick the whole pan in the fridge. Then, the first thing I do in the morning is go downstairs, turn on the oven, stick the oatmeal in and set the timer. By the time we are done with the first part of our morning routine, breakfast is ready :)! I hope you enjoy it. This is one of those rare recipes that all of my kids enjoy.
